Well it is that time of year again! Time to bring out everything pumpkin spiced, warm boots and sweaters. Do you love autumn as much as I do? From the vibrant colors to all the smells and beautiful scenery all around us. These simple things have a way of  showing us that there are so many reasons to appreciate the changes in life. Every time autumn rolls around I enjoy spending more time outdoors. I find the most colorful nature path in hopes to view some wildlife. Fall brings us the opportunity to spot some animals in nature as well as enjoying the beauty of the leaves changing color. Here are some of my favorite autumn themed sayings that include animals.

Fall Baking

Pumpkin Oatmeal Chocolate Chip Cookies

Ingredients

Makes 18- 20 Cookies

  • 3/4 cup of margarine or butter at room temperature 
  • 1 cup of light brown sugar
  • 1/2 white granulated sugar
  • 1/2 + 2 tablespoons of canned pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 and 1/2 cups quick oats
  • 1 and 1/2 cups white all purpose flour
  • 1 cup of semi sweet chocolate chips
  1. Preheat your oven to 350 degrees F.
  2. In a large bowl cream together margarine or butter with the brown and white sugar. Add the egg and mix again, add the pumpkin puree and vanilla and incorporate all of the ingredients.
  3. In a separate bowl mix the flour, baking soda, baking powder, salt, pumpkin spice, and cinnamon. Add the quick oats and stir again.
  4. Add the dry ingredients to the wet and mix until combined. Fold in the chocolate chips.
  5. Add spoonfuls of cookie dough to the baking sheets making sure they are spaced well. Bake for 12 – 15 minutes.
  6. Place them on a wire rack until they are cool. Enjoy!

pumpkin Chocolate chip muffins

Ingredients

Makes a dozen muffins

  •  1 and 2/3 cups of all purpose flour
  • 1 teaspoon baking soda
  • 1 and 1/4 teaspoons of ground cinnamon 
  • 1 teaspoon of allspice
  • 1/2 teaspoon of salt
  • 2 large eggs
  • 3/4 cup of granulated sugar
  • 1/2 cup of brown sugar
  • 1/2 cup vegetable oil
  • 1 and 1/4 cups of pumpkin puree
  • 1/4 cup of milk
  • 1 cup of semi sweet chocolate chips
  1. Preheat oven to 375 degrees f.
  2. In a large bowl whisk together flour, baking soda, cinnamon, allspice, and salt.
  3. In a medium bowl, whisk together eggs, sugar until combined. Add pumpkin and milk and whisk until combined. Pour the flour mixture into the pumpkin mixture and gently mix just until combined.
  4. divide the batter evenly among the muffin liners. Bake 16-23 minutes or until a toothpick inserted into the center comes out clean. Allow them to cool completely before removing them from the muffin tin.
Some of the best ways to get into the feeling of fall are to decorate our homes with fall decor and make our surroundings smell like fall. One of the very best ways to do this is to use scented candles to make this happen. You can have the smell of fresh baking or luxurious spices all around you by just burning a lovely smelling candle.
